Our Raw Cold Water shrimp in sashimi
we recommend following these simple steps:
Freshness is key: Ensure your Raw Cold Water shrimp is fresh and properly stored. Look for firm and translucent flesh with a natural sheen. The shrimp should have a mild oceanic aroma, indicating its high quality.
Preparing the shrimp: Gently rinse the shrimp under cold water to remove any residual ice or debris. Pat them dry with a paper towel, being careful not to apply too much pressure and maintain their pristine appearance.
Delicate slicing: With a sharp knife, carefully slice the shrimp into thin, uniform pieces. Aim for slices that are around ¼ to ½ inch thick. Take your time to create precise cuts, allowing each slice to showcase the shrimp's natural beauty.
Artful presentation: Arrange the sliced shrimp on a clean, chilled plate or platter. Get creative with your presentation by arranging them in a visually appealing pattern. Consider garnishing with fresh herbs, citrus slices, or edible flowers for an extra touch of elegance.
Dipping and savoring: Enjoy the Raw Cold Water shrimp sashimi with traditional soy sauce, wasabi, and pickled ginger. Dip each slice lightly into the soy sauce and wasabi mixture to enhance the shrimp's flavor. Take small bites and let the flavors dance on your palate. The shrimp's sweet and briny taste should shine through with each bite.
Appreciate the texture: As you savor the Raw Cold Water shrimp sashimi, pay attention to its texture. The shrimp should be tender, yet slightly firm, providing a satisfying bite. Take your time to enjoy the unique mouthfeel and let the shrimp's natural sweetness unfold.

アカエビ - 赤海老
Their sweet flavour and meaty texture gives them a similar eating quality to lobster and cooking in shell only elevates this flavour.
This shrimp mainly lives in the shallow waters of the Atlantic Ocean off the southern coast of Argentina, and sometimes make myriads of colonies. Therefore, it can be caught in large groups using nets so the cost is relatively low.
In order to preserve freshness, shrimp to be used for sashimi and sushi is selected on the ship and rapidly frozen.
This shrimp is also known for its boiled-like red color, despite not being boiled. The coloring comes from red pigmented carotenoid and the Argentine red shrimp contains about double that of the Black tiger shrimp.
